How did you get into this industry?
I love to cook; I've always loved being around food. It's my 2nd passion after hockey.
What’s always in your fridge or pantry?
Eggs and flour. You can make anything!
What do you cook at home?
Homemade pasta noodles and burgers.
How do you test the quality of your ingredients?
Always. Every day at every stage of preparation, I'm tasting ingredients.
Did you go to culinary school? Where did you get your start?
I did the fast track at Boulder Culinary School and it was an awesome experience. It was small, intimate classes and our instructors were a classically trained French chef and a Pastry Chef.
What is your favorite cuisine to cook?
Italian and Mexican
What do you think is exciting right now in the Denver restaurant industry?
Molecular Gastronomy. I'm inspired by Grant Achatz (who doesn't have taste buds) who has a Molecular Gastronomy restaurant in Chicago (Alinea) and New York. His story and the concept is so interesting.
What’s your most requested item on the BST menu?
The wings and nachos are wildly popular.
What do you love about Blake Street Tavern?
I'm a name, not a number. We truly have that family feel, both with our guests and definitely with our staff. We are an awesome team in an energetic and supportive environment.
What’s your favorite item on your menu?
Oh, the Reuben! It's local corned beef and the best I've ever had. Put it on the fresh rye we get from Blue Point bakery and it really stands up to any Reuben out there. It's the first thing I ate when I started here a year ago and still my favorite.
